When I logged into Gtalk today, I noticed there was an update. After the update was completed, a prompt option appeared asking users if they wanted to save chat history to Gmail. Upon opening Gmail, a new directory called "Chats" appeared above the Sent Mail directory, which is where the chat history is saved. It's worth noting that I am using the English version of Gmail; it seems that this service has not yet been launched for the Chinese version.
