Sichuan-style Cold Noodles Recipe

Ingredients:

Half a catty of fresh noodles, sprouts, peanuts, green onions, soy sauce, sesame oil, vinegar, sugar, chili oil.

Method:

1. Cook the fresh noodles in boiling water over medium heat until they are about 80% cooked.

2. Rinse the noodles in cold water to cool them down, then drain and mix with about 2 teaspoons of sesame oil to prevent sticking.

3. Heat an appropriate amount of oil in a wok and fry the peanuts until crispy. Let them cool, then crush lightly with a knife or rolling pin but not into powder.

4. Leave one spoonful of oil in the wok, heat until 50% hot, then add the chopped sprouts and a little green onion. Stir-fry over medium heat until fragrant and add a small spoonful of sugar.

5. Add 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of sugar, an appropriate amount of chicken essence, and red oil to the cooked noodles and mix well.

6. Add an appropriate amount of chili oil according to your taste...

Authentic flamed noodles include lard in the seasonings, making the noodles shiny after mixing, but without excessive soup at the bottom of the bowl. You can make modifications based on your preference.
