In Western Fujian, there are eight famous dried delicacies with unique flavors, namely Liancheng sweet potato chips, Wuping pig bile ham, Mingxi meat jerky, Ninghua dried mice, Shanghang radish chips, Yongding vegetables chips, Ninghua chili chips, and Zhangting tofu chips. Among them, Ninghua dried mice is made by capturing field mice and mountain mice after the Start of Winter, then steaming, removing the skin, cutting open the abdomen, removing the intestines, and placing the meat, liver, and heart together in a hot pot with rice or fine sugar to be roasted into dried food. The shiny red dried mice have a fragrant taste and can be cooked into delicious dishes like stir-fried ground monkeys, making it a renowned dish at banquets. Dried mice are also excellent export products.

This Shaanxi specialty involves mixing water dough and yeast dough, adding refined salt, alkali, lard, and fresh Sichuan pepper leaves, kneading evenly to form a dough ball, and rolling it into a round pancake. Select river pebbles the size of chestnuts, heat them in a flat-bottomed pan, take out half, place the dough pancake inside, cover it with the other half of the heated stones, close the lid, and bake until the pancake is done. Although the pancake may not be perfectly flat, it is evenly heated and neither raw nor burnt, resulting in a very good taste.
