(1) Effect of lowering plasma cholesterol. Most soluble fibers can reduce the level of plasma cholesterol, especially low-density lipoprotein cholesterol. Various fibers can reduce the absorption rate by adsorbing bile acids and fats, which also helps to lower blood lipid levels.

(2) Influence on postprandial blood glucose and insulin levels. Soluble fiber can reduce the extent of postprandial blood glucose elevation and decrease serum insulin levels or enhance insulin sensitivity.
