General description: The mesophilic α - amylase is refined by Bacillus Subtilis through deep fermentation. It is widely used in the liquefaction in alcohol, beer, monosodium glutamate, starch sugar and fermentation industries as well as in the desizing of textile printing and dyeing.
Principle: It can hydrolyze the α-1.4 glucosidic linkages in the starch molecules and randomly cut them into short-chain dextrins and a small amount of low-molecular-weight sugars.
