I. Ingredients

II. Preparation of Northeastern China Monkey Head Mushroom
1. Material Selection: Choose whole Northeastern China monkey head mushrooms of uniform size, remove impurities, soak in alkaline water for 2 hours, then rinse twice with clear water.

4. Making Soup: ① Weigh cornstarch, wheat flour, salt, and sugar according to the above formula, add 40ml of water, mix evenly, stir into a paste, then while stirring continuously, pour about 200ml of boiling water to gelatinize the starch, making a thick soup. ② Add refined vegetable oil, soy sauce, pepper powder, and starch, stirring while adding, and finally add MSG. ③ Mix rice wine and vinegar, add ground ginger and green onion, filter twice, take 30ml of the filtrate, and add it to the soup ingredients.
5. Canning: Place the processed monkey head mushrooms weighing 100-125g into a pre-cleaned 500ml canning jar, then add 500ml of soup. Seal the lid, sterilize at 121°C for 17 minutes, pass quality inspection, label, and package for factory release.
