Teach you to make a home-style dish: Bitter Melon Chicken Wings
Ingredients: 1 bitter melon, 10 chicken wings, 1 tablespoon of black pepper, 5 dried chili peppers, 1 can of beer, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of salt.
Directions:
1. Wash the bitter melon, remove the seeds and slice it. Boil water in a pot, blanch the bitter melon and set aside.
2. Cut the chicken wings in half. Put an appropriate amount of oil in the pan, fry until the chicken pieces are golden brown, then set aside.
3. Leave a little oil in the wok, add chopped green onions, ginger slices, black pepper, and dried chili peppers to stir-fry until fragrant.
4. Add the fried chicken pieces and stir-fry. Add light soy sauce, dark soy sauce, and salt for seasoning.
5. Add a can of beer, bring to a boil over high heat, then reduce the heat, cover the pot and simmer for about 15 minutes.
6. Add the blanched bitter melon and continue to simmer for 10 minutes. Uncover and thicken the sauce over high heat, then serve.
Friendly Tips:
1. Blanching the bitter melon can remove some of its bitterness.
2. Stewing chicken wings with beer, the alcohol will evaporate and take away some of the bitterness, achieving double de-bittering.
3. When stir-frying black pepper, do not use too high heat, otherwise it is easy to burn.
