Centipede Processing Technology:

Live centipedes caught should first be scalded to death in boiling water, then the tail end cut off to squeeze out feces and urine. A thin bamboo slice of appropriate length and width should be prepared, with both ends sharpened. One end is inserted under the centipede's palate, and the other into the tail, using the elasticity of the bamboo to stretch the centipede straight. Then, place it under the sun to dry. If it is rainy, use charcoal fire to dry it. After drying, remove the bamboo slice (be careful not to break the head and tail, affecting quality). Centipedes of similar body length should be aligned with their heads facing one direction. Use a thin bamboo strip about 1 cm wide to clamp across the back and abdomen, tie them in rows, each row containing 50 centipedes, and store them in a wooden box sealed tightly.

Quality Requirements: The finished centipedes should be completely dry, flat and elongated in shape, with reddish-brown heads, black-green backs with a glossy appearance and two raised ridges, and brown-yellow abdomens that are shriveled. The legs are yellow or reddish-brown, bent backward, with the last segment needle-like. The cross-section may have cracks or be hollow, with a slightly fishy smell and a pungent odor. They taste spicy and slightly salty, with complete heads and tails, no fragmentation, no insect damage, and no mold.
