Dry Potatoes with Sautéed Pork Belly

Ingredients: 100g pork belly, one medium potato, about 20g onion, one pointed pepper, green onions, ginger, garlic, Pixian broad bean paste, fermented black beans, Sichuan peppercorns, chili oil (or Lao Gan Ma chili sauce), soy sauce, sugar, and chicken powder.

Instructions:

1. Prepare the pork belly by boiling it in water with a couple slices of ginger and some Sichuan peppercorns until cooked through but not falling apart. Once slightly cooled, slice the pork belly into thin strips.

2. Peel the potato and cut into slices that are twice as thick as you normally would for stir-fried potatoes. Fry these slices until golden brown or pan-fry them with a bit of oil on both sides until golden. For this recipe, I pan-fried the potato slices, which made them softer compared to deep frying which makes them crispier.

3. Heat oil in a wok over medium heat, then add shredded ginger, sliced garlic, crushed fermented black beans, and a tablespoon and a half of Pixian broad bean paste. Stir-fry until the red oil is released.

4. Add the pork belly slices and stir-fry over medium heat until the fat becomes translucent. This step is crucial as it prevents the pork from being greasy when eaten.

5. Once the pork belly is translucent, add the shredded onion and pointed pepper segments. Stir-fry briefly, then add around 20 Sichuan peppercorns and dried chilies, continuing to stir-fry until fragrant.

6. Add a spoonful of chili oil (or Lao Gan Ma chili oil) and stir-fry briefly.

7. Pour in 10ml of soy sauce, a small amount of sugar, and chicken powder. Stir-fry evenly.

8. Finally, add the pre-cooked potatoes. Since my potatoes were pan-fried and softer, they can break easily during stir-frying, so I carefully mixed the pork belly and sauce using chopsticks. Lastly, sprinkle with chopped green onions before serving.
