In the ancient town, the Tongcai of Su Family Ancestral Hall has long been famous for its crispness. Tongcai must have a root system with shallow roots and strong regenerative power. The xerophytic type has short stems, flat or nearly round stems, hollow stems, dark green to light green. Another characteristic dish in the ancient town is "Casserole Tongcai". When the casserole is served in a basin shape, a peculiar fresh fragrance follows. The specially made Tongcai with garlic heads is accompanied by thick shrimp paste, which tastes fresh, fragrant, and crispy, living up to its reputation indeed.
