Jinshan fire garlic is a well-known local specialty of Kaiping. Jinshan fire garlic was first planted in Qinglongli, Shuxia, Shuikou during the Guangxu period of the Qing Dynasty, and then gradually spread to areas like Siquan, Xinwu, and Jinshan for large-scale planting, becoming one of the main export agricultural products of Kaiping. Due to the large volume of exports through the Jinshan wharf, it was named "Jinshan fire garlic". The characteristics of Jinshan fire garlic include porcelain-white flesh, thickness, high oil content, strong flavor, spicy when raw and sweet when cooked, rich in gelatin, with a bead-like fibrous cross-section.
