Corn's greatest contribution to humans is that it contains abundant pigments, such as lutein and zeaxanthin (a type of carotene), which color corn golden. Although they are not nutrients, their functions resemble those of nutrients. They are powerful antioxidants that can protect the macula, the light-sensitive area in the eyes, preventing age-related macular degeneration and cataracts. The macula is located in the central part of the retina and is responsible for vision.

Due to aging, when the fat in the macula oxidizes, becomes damaged, and gets destroyed, macular degeneration, vision loss, and even blindness may occur. However, with their strong antioxidant effects, lutein and zeaxanthin can absorb harmful light entering the eyeball, maintaining the health of the macula.

It should be noted that only yellow corn contains lutein and zeaxanthin; white corn does not. Therefore, people who use their eyes frequently, such as taxi drivers, middle school students, editors, and writers, should eat more yellow corn.

In addition, corn also contains various anti-cancer factors, such as glutathione, lutein, zeaxanthin, trace elements selenium, and magnesium. Glutathione can bind carcinogens, making them inactive and expelling them through the digestive tract. It is also a potent antioxidant that can accelerate the inactivation of aging free radicals and is one of the most effective anti-cancer substances in the human body. Corn also contains selenium and magnesium. Selenium accelerates the decomposition of peroxides in the body, depriving malignant tumors of oxygen supply, leading to their demise. Magnesium, on the other hand, not only inhibits the development of cancer cells but also helps quickly eliminate waste from the body, thus playing a role in cancer prevention. Lutein in corn can prevent colorectal cancer, skin cancer, lung cancer, and cervical cancer, while zeaxanthin can prevent skin cancer and lung cancer.

Corn is rich in niacin, which is a component of glucose tolerance factor (GTF) and is a nutrient that enhances insulin action. Therefore, replacing staple foods with corn can help regulate blood sugar levels.
