Pure Brightness, as the name suggests, is the meaning of clear sky and clean earth. The lunar calendar book says: "The dipper points to Ding for Pure Brightness. At this time, all things are clean and clear, hence the name." During the Pure Brightness solar term, when the sun reaches the celestial longitude of 15 degrees, the average daily temperature in most parts of our country has risen above 12 degrees. This is exactly the time when peach blossoms bloom and willows turn green, presenting a bright and clear scenery after the withered and decayed have passed with the wind.

Although tomb-sweeping is a common custom during the Qingming Festival across different regions, the ways of ancestor worship vary. From the perspective that people refer to Qingming as the "Ghost Festival", inserting willow branches and wearing willow accessories seem to have the function of driving away evil and avoiding misfortune. Therefore, folk also refers to Qingming as the "Cold Food Festival". That is, on the day of Qingming, there is a saying that you should not start a fire or eat hot food, otherwise you will be punished by the gods.

From the perspective of Traditional Chinese Medicine (TCM) health care, Qingming is also an especially important solar term. During this period, because it is the prone season for hypertension, we will discuss how to maintain health around this disease.

First, we need to know what is hypertension? I've already talked a lot about the topic of hypertension. The incidence of coronary heart disease and acute myocardial infarction in hypertensive patients is 3-5 times higher than that in normal blood pressure individuals. In addition to observing changes in blood pressure, TCM's diagnostic key points for this disease also require analysis of symptoms such as dizziness and headache in patients. Causes often include aging and physical weakness, emotional imbalance, overwork and long-term illness, dietary bias, etc. Its pathology mainly involves yin-yang imbalance, root deficiency and marker reality.

Below, I will introduce several recipes for preventing and treating hypertension.

1. Home-style Rooster

Ingredients: 250 grams of tender rooster, 75 grams of celery, 10 grams of winter bamboo shoots, 20 grams of chili peppers, 30 grams of lean meat soup, ginger, broad bean paste, sugar, soy sauce, vinegar, salt, starch, monosodium glutamate, vegetable oil in appropriate amounts.

Method: Cut the chicken into small pieces, blanch them in boiling water, then take them out and set aside; cut the celery, slice the winter bamboo shoots into thin strips, chop the chili peppers, grind the ginger, mix the starch with water, take half and mix it with soy sauce, cooking wine, vinegar, and salt in the same bowl and stir evenly; reserve the other half of wet starch and mix it with sugar, monosodium glutamate, high broth, and adjust it into a powder slurry for later use.

Heat the vegetable oil in a pan, first fry the chicken pieces until the chicken turns white and the water is almost dry, then add winter bamboo shoots, broad bean paste, ginger, etc., and stir-fry vigorously over high heat until nine-tenths cooked, then add the chopped celery, stir-fry for a while, pour in the prepared powder slurry, stir continuously while frying until cooked and serve.

Effect: Warm the middle energizer, replenish the deficient, lower blood pressure, and calm the spirit. Suitable for consumption by patients with hypertension, coronary heart disease, malnutrition, and postoperative recovery.

2. Button Mushroom Cabbage

Ingredients: 250 grams of cabbage, 3 grams of dried button mushrooms, appropriate amount of soy sauce, sugar, fine salt, monosodium glutamate, vegetable oil.

Method: Wash the cabbage and cut it into 3 cm sections, soak the button mushrooms in warm water. After heating the oil in the pot, stir-fry the cabbage until seven-tenths cooked, then add button mushrooms, soy sauce, sugar, and salt, continue stir-frying until fully cooked, then add monosodium glutamate and stir evenly before serving.

Effect: Clear heat and relieve irritability, benefit stomach qi, lower blood lipids. Suitable for those with hypertension, coronary heart disease, and gum bleeding.

3. Chicken Soup Fish Roll

[Ingredients] 250 grams of live carp, 30 grams of lean pork, 10 grams of egg whites and peas each, 8 grams of ham, 10 grams of winter bamboo shoots, chicken soup, cooking wine, soy sauce, salt, starch, monosodium glutamate in appropriate amounts.

Method: Steam the ham until cooked and shred it, cut the winter bamboo shoots into shreds, mince the ginger and lean meat, mix the starch with water to form a wet powder, handle the live fish conventionally, remove the bones and spines, and slice it into small rectangular fish slices. Mix the minced meat with soy sauce, half an egg white, cooking wine, monosodium glutamate, minced ginger, and half of the wet starch to make the filling. Mix the remaining egg white with the wet starch to form a paste. Lay the fish flat on the chopping board, first apply a layer of paste, then place the meat filling on top, roll up the fish slice, and apply a little paste to stick the fish roll together. Bring the chicken soup to a boil over high heat, then reduce to low heat, drop the rolled fish rolls into the pot to blanch, remove the foam to keep the soup clear, once the fish rolls are cooked, add the shredded ham, winter bamboo shoots, and other ingredients to the soup, bring to a boil and it's ready.

Effect: Nourish yin and moisten dryness, clear heat and promote diuresis. Suitable for hypertension, coronary heart disease, cardiovascular disease, chronic nephritis, indigestion, etc.
