China Anji White Tea Network Information: Anji is located in the northwestern part of Zhejiang Province, known for its white tea and belonging to the famous tea region of Huzhou. Since ancient times, it has been renowned for producing fine teas. As early as the Tang Dynasty, Lu Yu, the tea sage who lived in seclusion in Huzhou, praised "the best tea in Zhexi comes from Huzhou... produced in Anji and Wukang counties" in his book "The Classic of Tea". In 1981, the trial production of Anji Bai Pian was successful. 1. Both types of white tea belong to green tea but differ in tree species. The tree species for Anji Bai Pian mainly include high-altitude green tea, "Longjing No.43", and "Ying Shuang", while currently, the tree species for Anji White Tea is solely "Bai Ye No.1".

2. The processing methods for both types of Anji white tea differ. Anji Bai Pian is either semi-baked or baked green tea, whereas Anji White Tea (commonly in "Phoenix Shape") is baked green tea. However, "Dragon Shape" Anji White Tea (Anji White Longjing) is stir-fried green tea.

3. Despite the significant price difference between Anji Bai Pian and Anji White Tea, there is no inherent "better or worse" for drinkers; personal preference matters most. Personally, Bai Pian has a unique charm distinct from other green teas, with a faintly cool aroma akin to snow on bamboo. The higher the grade of white tea, the purer this fragrance becomes.

4. Anji White Tea ("Bai Ye No.1") belongs to the "temperature-sensitive type" and specifically the "low-temperature sensitive type." Anji White Tea is a rare variant tea species, with the "white tea" production period being extremely short—usually about a month. Taking the original origin of Anji in Zhejiang as an example, in spring, the tender leaves that sprout before Qingming are pure white; before Guyu, the white gradually fades, mostly turning jade white; after rain until Xiazhi, the tender leaves gradually turn green, presenting a mix of white and green variegated leaves; by summer, the young leaves are entirely green, indistinguishable from regular green tea.

5. The degree of jade whiteness of Anji White Tea is significantly related to temperature, with a threshold around 23°C. Beyond this temperature, the leaves turn green. Due to the magical nature of Anji White Tea, which is harvested, processed, and made within its specific whitening period, its leaf base turns jade white after brewing, which is the main characteristic of Anji White Tea.

6. Additionally, based on personal experience and understanding, the higher the grade of Anji White Tea, the more its dry tea color appears golden yellow with hints of emerald green (especially pre-Qingming tea, many green teas share this feature). Those with bright green appearances may be slightly inferior.
